Let me start by saying these are not fluffy pancakes. I don’t use flour or dairy and they have chia so the pancake usually won’t be fluffy… BUT they are so delicious and healthy, you won’t even care about the fluffiness. Also, I made a super easy & healthy berry syrup to go perfectly with the pancakes.
HOW
Prep
Before you start blending and mixing, you need to get your chia seeds ready. For this recipe, you will need to soak the chia in filtered water prior to mixing it with everything else. I don’t have an exact measurement for the amount of water you need but for 1/4 C of chia seeds (pictured above) I use about 2 TB of water and mix in the chia seeds so they fully soak up all of the water and turn into something that looks almost like tiny tapioca pearls (the pearls found in your boba tea).
Mix
To make things easy (and quick) I blend all ingredients together instead of doing it separately. I know people will argue that mixing certain things separately makes a difference in the pancake, but I honestly just care about whipping up our morning breakfast as quickly as possible so I can go back to watching movies with my husband. Taste will not be compromised, I promise! Okay, back to the how.. take all ingredients and blend together in a blender.
Ingredients:
2-3 bananas
1 C of quick oats
24 almonds
1/4 C of Chia seeds (soak in water before use)
1 TS of ground cinnamon
1 TS of vanilla extract
1 TB of agave nectar
1/4 C of almond milk
1 egg
Do
Lightly spray oil (I used coconut oil) onto a pan and make your pancakes like you normally would.
Berry Syrup
This is super easy to make. Spray a little bit of coconut oil (or olive oil) in a small sauce pan over medium heat. Pour about 1/4 C of an assortment of your favorite berries (blueberries, blackberries and raspberries work best for this recipe) and about 2 TB of agave nectar. Let it simmer for a few minutes and begin crushing the berries. Depending on your preference, the berries may be completely crushed or some left uncrushed.
pour syrup over pancakes and voila!
